Understanding Dough Hydration

Dough hydration is the ratio of water to flour in your dough, expressed as a percentage. Different hydration levels produce different types of bread:

  • 60% - Perfect for bagels and pizza dough
  • 65% - Standard bread dough
  • 70% - Artisan bread with open crumb
  • 75% - Ciabatta and focaccia
  • 80%+ - Very wet dough for specific styles
